This is an old recipe that I ran across quite a while ago, and I wanted to be sure to convert it into a gluten free/dairy free recipe with lots of flavor. I played around with different ingredients and ended up with this delicious version, which I love!
These patties are a huge hit with my son who loves anything that is like a burger, meatloaf or meatballs. He gave it his stamp of approval. I really enjoy the crunch of the blue corn chips on the outside of the patties and the flavor of the chives as well.
These are delicious served with a variety of side dishes such as refried beans, rice, salsa and guacamole. I hope that you enjoy this for a delicious weeknight dinner soon!
Mexican Chuleta Patties with Blue Corn:
1 pound organic grass fed ground beef
2 tablespoons chopped chives
1/2 cup onions, finely chopped
1/3 teaspoon chili powder
1/2 teaspoon sea salt
1/2 cup crushed organic blue corn chips +( 1 cup crushed organic blue corn chips for coating patties with)
1. In a large bowl, mix together the ground beef, chives, onions, chili powder, egg, salt, pepper and 1/2 cup crushed blue corn chips.
2. Form small patties (makes 12-15 patties). Place on a plate, cover with plastic wrap and chill for 30 minutes.
3. Then, heat some olive oil in an electric skillet heated to 350F or a skillet on the stove over medium heat. Place the patties in the skillet and brown thoroughly on each side. Make sure the middle of the patties are cooked through.
4. Serve hot with sides of refried beans or rice and salsa or guacamole. Enjoy!
