I absolutely adore breakfast! It is the meal I most look forward to each day. I always wake up starving, so I am happy when I get breakfast prepared. I love to make special breakfasts on the weekend but still put a healthy spin on them. Since I have a Scandinavian background in my family I have had this abelskiver (pancake ball) recipe for a long time. However, this past weekend I decided to make it a bit healthier by making it with whole wheat pastry flour. It turned out light and fluffy and we all enjoyed them so much with a little cinnamon sugar and a little bit of pure maple syrup!
I hope that you enjoy these as much as we did. You do need a little cast iron abelskiver pan to be able to make these, but it is a worthwhile purchase. Enjoy!
Whole Wheat Cardamom Cinnamon Abelskiver
2/3 cup softened butter
1 tablespoon sugar
1 cup milk
2 cups whole wheat pastry flour
3 teaspoons baking powder
1 teaspoon cardamom
1 teaspoon cinnamon
In a stand mixer, whip softened butter and sugar, add eggs and beat well. Add whole wheat pastry flour, baking powder, cardamom and cinnamon, alternating with milk, a little at a time. Mix well.
Place your abelskiver pan on a burner over medium heat. Melt a little butter in the bottoms of the small cups. Fill the cups 2/3 full of batter. Bake for a few minutes, them flip with a fork and bake the other side. Make sure they are golden brown on each side.
Be careful to turn the heat down if the pancake balls start to burn. Cast iron pans heat up very quickly. Serve hot with cinnamon sugar sprinkled on top or with powdered sugar and lingonberry jam.
