Yummy Gluten Free Cookie Cones with Whipped Cream! 

Ah! I love the cool, crisp mornings of fall, the changing colors & the goodies and treats that are in store for us all in the coming holiday season. For a sneak peek, here is a recipe for these adorable cookie cones. Aren't the cutest? 

I came upon this idea by looking at an old Scandinavian cookbook. I have gotten lots of ideas from these books so far this fall. I knew that I could create a gluten free version of these yummy cookie cones and you can be creative with the toppings: chocolate, nuts, berries, jam & more! 

This is version #2 of these yummy cones and I had success this go-round. I learned what flour mix worked best, and what amount of batter to put on the baking sheet & also how long to bake these beauties for the best chance at rolling them properly into cones without them being too brittle. My first version was made with coconut flour and shredded coconut, but it proved to be too thick and not pliable enough to roll into cones although they were delicious! 

I am happy with the flavor and look of these cute little cones.

I hope you enjoy being creative with these little wonders today & this holiday season! They can even be made dairy free by greasing the baking sheet with coconut oil instead of butter and filling the cones with dairy free ice cream or whipped coconut milk. 

Gluten Free Cookie Cones


Cookie Batter

2 eggs

1/3 cup superfine sugar

3 tablespoons gluten free flour mix (brown rice flour, almond flour, arrowroot starch

1/4 teaspoon cinnamon


For greasing the cookie sheet: 

2 teaspoons either soft butter or coconut oil

1 tablespoon gluten free flour mix


Gluten Free Flour Mix: 

2 cups brown rice flour

2/3 cup almond flour

1/3 cup arrowroot starch


Preheat the oven to 400F. 

1. Mix together the gluten free flour mix in a medium bowl with a whisk. Save the rest in a zip lock bag in the refrigerator for another use.

2. Grease 2 cookie sheets with the softened butter or coconut oil. Sprinkle a bit of the gluten free flour mix onto the sheet & tap the excess off. 

3. Mix together the eggs, superfine sugar, 3 tablespoons of the flour mix and cinnamon in the bowl of a stand mixer fitted with a paddle or with a hand mixer in a small bowl. 

4. Measure out 1 tablespoon of batter for each cookie cone. Use the tablespoon to spread the cookie out thinly, into about a 4 inch circle. 

5. Bake in the preheated oven on the middle rack for 5 minutes. Bake one sheet of cookies at a time. 

6. Take out of the oven and immediately use a metal spatula to remove one cookie at a time from the sheet. Shape the cookie into a cone around your thumb. Place in a small glass to cool. Repeat this process with each cookie cone. 

This recipe makes about 12 cookie cones. It will take some practice to make the cones and you might have a few "casualties" along the way, but don't despair. Keep practicing and if needed, make another batch!
